Homemade Hostess Cupcakes Copycat Recipe

My brother-in-law Adam moved in with me and Bryan yesterday. He will be staying with us through the end of February while he does a computer software internship with Bryan. Since I know that he is a sweets person I decided to bake some cupcakes yesterday afternoon for him to enjoy. I have wanted to bake these filled cupcakes for some time now. The cupcake recipe I used was from The Novice Chef. I loved that no mixer was required! I used my own buttercream filling recipe, mixing half traditional buttercream with marshmallow fluff. I modified the ganache based on one found on Annie’s Eats. It’s almost boiling whipping cream poured over 8 ounces of bittersweet chocolate, let sit for 1-2 minutes then stir until smooth. While still hot you add 3 tablespoons of butter.

The cupcakes taste delicious and best of all they were quick and easy to come together!
